A refreshing and hearty chicken salad with sweet pineapple and crunchy pecans, perfect for summer gatherings.
Ingredients

- 2 Chicken Breasts, cooked and shredded
- 1 cup Pineapple Chunks (fresh or canned)
- 1/2 cup Pecans, chopped
- 1/2 cup Celery, chopped
- 1/4 cup Mayonnaise
- 1/4 cup Greek Yogurt (optional)
- 2 tbsp Lemon Juice
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken with salt and pepper and bake for 25-30 minutes until cooked through.
- Let the chicken rest for 10 minutes, then shred or chop it into bite-sized pieces.
- Chop the celery and pineapple into small chunks and chop the pecans if whole.
- In a large mixing bowl, combine the shredded chicken, pineapple, celery, and pecans. Add mayonnaise, Greek yogurt, and lemon juice.
- Season with salt and pepper and toss gently until well combined.
- Cover and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Serve the salad on a bed of greens or in a wrap, and enjoy!
