Description

A refreshing chicken salad bursting with tropical flavors of pineapple and coconut, perfect for summer gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup shredded coconut
  • 1 cup fresh pineapple, diced
  • 1/2 cup macadamia nuts, chopped
  • 4 cups mixed greens
  • 1/2 cup mayonnaise
  • 1/4 cup coconut cream
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by grilling, poaching, or sautéing until cooked through.
  2. Let the chicken cool, then shred it.
  3. Chop the pineapple and macadamia nuts.
  4. Mix the coconut, pineapple, nuts, and greens in a bowl.
  5. Whisk together mayonnaise, coconut cream, lime juice, salt, and pepper in another bowl.
  6. Combine shredded chicken with greens and pour dressing over. Toss gently.
  7. Serve immediately or chill for enhanced flavors.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. Store leftovers in an airtight container for 1-2 days, keeping dressing separate if possible.
