Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup shredded coconut
- 1 cup fresh pineapple, diced
- 1/2 cup macadamia nuts, chopped
- 4 cups mixed greens
- 1/2 cup mayonnaise
- 1/4 cup coconut cream
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Prepare the chicken by grilling, poaching, or sautéing until cooked through.
- Let the chicken cool, then shred it.
- Chop the pineapple and macadamia nuts.
- Mix the coconut, pineapple, nuts, and greens in a bowl.
- Whisk together mayonnaise, coconut cream, lime juice, salt, and pepper in another bowl.
- Combine shredded chicken with greens and pour dressing over. Toss gently.
- Serve immediately or chill for enhanced flavors.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. Store leftovers in an airtight container for 1-2 days, keeping dressing separate if possible.
