Pecan Pie Cheesecake Bars
The perfect mashup of creamy cheesecake and gooey pecan pie!
Ingredients
For the Crust:

1½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup melted unsalted butter
For the Cheesecake Layer:

16 oz cream cheese, softened
-
½ cup granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
For the Pecan Pie Topping:

1 cup chopped pecans (toasted)

1 cup brown sugar
-
½ cup corn syrup (or maple syrup)

½ cup heavy cream
-
¼ cup unsalted butter
-
1 tsp vanilla extract
Instructions
1. Preheat & Prep

Preheat oven to 350°F (175°C).

Line a 9×13-inch pan with parchment paper (for easy removal).
2. Make the Crust

Mix graham crumbs, sugar, and melted butter until combined.

Press firmly into the pan. Bake for 8 mins.
3. Cheesecake Layer

Beat cream cheese and sugar until smooth.

Add eggs and vanilla, mixing just until combined.

Pour over crust. Bake for 15 mins (edges will puff slightly).
4. Pecan Topping

In a saucepan, combine pecans, brown sugar, corn syrup, cream, and butter.

Simmer for 4 mins, stirring constantly. Remove from heat, stir in vanilla.
5. Assemble & Bake

Pour pecan topping over cheesecake.

Bake 25-30 mins until bubbly at edges.

Cool completely, then refrigerate 4+ hours before slicing.
