Pecan Pie Cheesecake Bars
The perfect mashup of creamy cheesecake and gooey pecan pie!


Ingredients

For the Crust:

  • 1½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup melted unsalted butter

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

For the Pecan Pie Topping:

  • 1 cup chopped pecans (toasted)

  • 1 cup brown sugar

  • ½ cup corn syrup (or maple syrup)

  • ½ cup heavy cream

  • ¼ cup unsalted butter

  • 1 tsp vanilla extract


Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Line a 9×13-inch pan with parchment paper (for easy removal).

2. Make the Crust

  • Mix graham crumbs, sugar, and melted butter until combined.

  • Press firmly into the pan. Bake for 8 mins.

3. Cheesecake Layer

  • Beat cream cheese and sugar until smooth.

  • Add eggs and vanilla, mixing just until combined.

  • Pour over crust. Bake for 15 mins (edges will puff slightly).

4. Pecan Topping

  • In a saucepan, combine pecans, brown sugar, corn syrup, cream, and butter.

  • Simmer for 4 mins, stirring constantly. Remove from heat, stir in vanilla.

5. Assemble & Bake

  • Pour pecan topping over cheesecake.

  • Bake 25-30 mins until bubbly at edges.

  • Cool completely, then refrigerate 4+ hours before slicing.
