Ingredients

  • 2 lbs bone-in beef short ribs

  • 2 medium sweet potatoes, peeled & cubed

  • 1 cup frozen peach slices (juice-packed preferred)

  • 1 small red onion, sliced

  • 3 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1½ cups beef broth (low-sodium)

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp salt + ½ tsp black pepper

  • 34 sprigs fresh thyme (or 1 tsp dried)


Notes

Ladle over jasmine rice, mashed cauliflower, or crusty bread. Garnish with fresh thyme or balsamic-drizzled grilled peaches for flair!
