No-Bake Greek Yogurt Jello Cheesecake

Description

A light and refreshing no-bake cheesecake made with Greek yogurt and fruity Jello.


Ingredients

  • 1 1/2 cups Graham cracker crumbs
  • 1/2 cup Unsalted butter, melted
  • 2 cups Greek yogurt
  • 8 oz Cream cheese, softened
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1 tbsp Gelatin powder
  • 1/4 cup Fresh fruit (for topping)
  • 1 package Jello powder (any flavor)

Instructions

  1. Prepare the crust by mixing the graham cracker crumbs with melted butter and pressing into a springform pan.
  2. Bake the crust at 350°F for 8-10 minutes or skip baking for a no-bake option.
  3. Combine Greek yogurt, cream cheese, sugar, and vanilla in a bowl until smooth.
  4. Dissolve gelatin powder in warm water and let it sit for 5 minutes.
  5. Blend the gelatin mixture into the yogurt mixture.
  6. Pour the filling into the cooled crust and smooth the top.
  7. Chill in the fridge for 3-4 hours until set.
  8. Prepare Jello according to package instructions and pour over the set cheesecake.
  9. Chill again for an hour until firm.
  10. Serve chilled with fresh fruit on top.
