Ingredients

4 lbs boneless, skinless chicken breasts (or thighs)

2 lbs fingerling potatoes, halved

1 lb green beans, trimmed

2 cups shallots, sliced

½ cup olive oil

3 tsp sea salt

2 tbsp fresh rosemary, chopped
Honey-Mustard Sauce

½ cup whole grain mustard

4 tbsp Dijon mustard
-
⅔ cup honey
-
2 tbsp apple cider vinegar
-
1 tsp paprika
-
1 tsp garlic powder
Instructions

Preheat oven to 400°F (200°C). Line a sheet pan with parchment.

Roast Potatoes: Toss potatoes with ¼ cup oil, 1½ tsp salt, rosemary, and half the shallots. Roast 15 mins.

Mix Sauce: Whisk all sauce ingredients until smooth.

Add Chicken & Shallots: Season chicken with remaining salt. Add to pan with rest of shallots. Spoon HALF the sauce over chicken and potatoes. Roast 15 mins.

Add Green Beans: Toss green beans in 2 tbsp oil, nestle onto sheet. Spoon remaining sauce over everything. Roast another 10–15 mins, until chicken hits 165°F.

Rest & Serve: Let rest 5 mins. Slice chicken, plate with potatoes and beans. Drizzle pan juices on top.
