Ingredients

  • 4 boneless chicken breasts
  • 1 cup honey BBQ sauce
  • 2 pounds baby potatoes
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the chicken breasts and pat them dry with a paper towel. Season with salt and pepper.
  3. Place the chicken in a large bowl and pour the honey BBQ sauce over it. Toss to coat.
  4. Wash the baby potatoes and cut them in halves or quarters. Place them in a bowl with olive oil, garlic, salt, pepper, and half of the Parmesan cheese. Toss to coat.
  5. Spread the potatoes on one side of a lined baking sheet and place the chicken on the other side. Bake for 25-30 minutes.
  6. Once nearly done, sprinkle the remaining Parmesan on the potatoes and bake for an additional 5 minutes.
  7. Serve on a platter and garnish with fresh parsley.
