Homemade Arby’s-Style Roast Beef & Cheddar Sandwiches

  • Author: BeauCollier
  • Total Time: 20 min

Description

Bring that iconic drive-thru favorite into your own kitchen—juicy, tender roast beef piled high, draped in silky cheddar sauce, and hugged by a soft onion roll. Add golden curly fries and you’ve got the perfect comfort food experience—minus the line.

Ingredients

Scale
  • 1 lb deli roast beef, ultra-thin sliced (“shaved”)

  • 1 can (15 oz) Ricos Premium Cheddar Cheese Sauce (or homemade)

  • 4 onion rolls (or brioche/Kaiser)

  • 1 bag frozen seasoned curly fries (Arby’s brand if possible)

  • Foil sheets for warming beef

  • Optional: melted butter for buns, paprika & garlic powder for fries

Instructions

  • Preheat & Wrap – Heat oven to 250°F. Stack 6–8 slices beef per sandwich in the center of a greased foil sheet. Loosely seal with a small air pocket.

  • Warm Beef – Place packets on oven rack for ~8 min (add 1–2 min if beef is fridge-cold). Steam should puff when opened.

  • Heat Cheese – Warm cheese sauce in a saucepan over low heat, stirring often. Add 1 tbsp milk for extra creaminess.

  • Toast Buns – Split and toast buns cut-side-up in a dry skillet 1–2 min, or broil until golden. Brush with melted butter for extra flavor.

  • Assemble – Layer beef high on bottom bun, spoon cheese generously on top, crown with top bun.

  • Cook Fries – Bake or air-fry per package. Toss with paprika & garlic powder for extra zing.

Notes

  • Don’t overheat the beef—low and slow keeps it tender.

  • Double cheese sauce for dipping fries.

  • For party prep, keep beef wrapped in foil and sauce warm on low until ready to assemble.
