- 1 cup cottage cheese
- 1 cup blueberries
- 2 cups oats
- 4 eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×9-inch baking dish with oil or non-stick spray.
- Combine cottage cheese and eggs in a large mixing bowl and whisk until creamy.
- Stir in honey or maple syrup and vanilla extract.
- Fold in the oats until well combined.
- Add baking powder and salt, folding gently.
- Toss in blueberries, folding them into the mixture.
- Pour the mixture into the greased baking dish and spread evenly.
- Bake for about 30–35 minutes, until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes before slicing and serving.
