Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup fresh pineapple, diced
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup celery, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • Lettuce leaves for serving

Instructions

  1. Prepare your chicken. Start with 2 cups of cooked, diced chicken. If you’re using leftover rotisserie chicken, shred it into bite-sized pieces with your fingers or a fork.
  2. Chop the veggies. Dice your fresh pineapple, bell pepper, red onion, and celery into small, even pieces.
  3. Mix it all together. In a large bowl, combine the diced chicken, pineapple, bell pepper, red onion, and celery. Gently stir the mixture to combine.
  4. Dress it up. Add the mayonnaise and lime juice to the bowl, along with salt and pepper. Gently fold until everything is coated.
  5. Chill and serve. Cover the bowl and let the flavors meld for at least 30 minutes in the refrigerator.
  6. Get creative with plating! Lay out some crisp lettuce leaves on a plate or in individual bowls. Spoon generous portions of your Hawaiian Chicken Salad onto the leaves.
