Ingredients

  • 4 lavash wraps (or whole wheat tortillas)

  • ½ cup hummus (try roasted red pepper for extra zing)

  • 2 medium zucchini, sliced

  • 1 large red onion, sliced

  • 1 tbsp olive oil

  • 2 tbsp balsamic vinegar + 1 tbsp honey (or maple syrup)

  • ½ tsp Italian seasoning + ½ tsp kosher salt

  • 2 oz shredded mozzarella (or vegan cheese)


Instructions

  1. Grill the Veggies: Toss zucchini & onion with oil, salt, and seasoning. Grill 4–5 mins per side until charred.

  2. Mix the Glaze: Whisk balsamic vinegar and honey until smooth.

  3. Assemble Wraps: Spread hummus on lavash, layer veggies, cheese, and drizzle glaze.

  4. Wrap & Grill: Roll tightly, then grill seam-side down for 1–2 mins per side until crisp and melty.

  5. Slice & Serve: Cut diagonally and serve with extra glaze or a fresh salad.
