A flavorful and versatile grilled sea bass dish topped with zesty herb butter, perfect for any occasion.


Ingredients

  • 2 sea bass fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh herbs (such as parsley, thyme, or dill), chopped
  • 2 cups mashed potatoes
  • Microgreens for garnish
  • 1 lemon, charred

Instructions

  1. Preheat your grill to 400°F (medium-high heat).
  2. Prep your sea bass by drizzling olive oil over both sides and seasoning generously with salt and pepper.
  3. Make your herb butter by mixing unsalted butter with fresh herbs and lemon zest.
  4. Grill the fillets skin side down for 4-5 minutes, then gently flip and cook for another 4-5 minutes until they flake easily.
  5. Char your lemon halves on the grill cut-side down for about 3 minutes.
  6. Plate by placing mashed potatoes on the plate, topping with sea bass and herb butter, and garnishing with charred lemon and microgreens.
  7. Dig in and enjoy your delicious creation!

Notes

Feel free to substitute sea bass with snapper or cod. You can also prep the herb butter and mashed potatoes ahead of time.
