Ingredients

1 lb ground beef (or turkey, tofu, tempeh)

1 tbsp toasted sesame oil

2 garlic cloves, minced

1 tbsp fresh ginger, grated

¼ cup soy sauce (or tamari, coconut aminos)

2 tbsp brown sugar or honey

1 tbsp rice vinegar

1 tsp cornstarch + 1 tbsp water (optional for thick sauce)

6 oz cooked soba noodles (or rice noodles, zoodles)

2 cups broccoli florets, steamed crisp-tender

2 green onions, sliced

1 tbsp toasted sesame seeds
Instructions

Cook noodles and rinse under cold water. Drizzle with sesame oil to prevent sticking.

Steam broccoli until bright green and crisp-tender. Shock in ice water, drain.

Sauté beef in sesame oil with garlic and ginger. Add soy sauce, sugar, vinegar.

(Optional) Mix cornstarch slurry in for glossy sauce. Simmer until thick.
