- 8 ounces rotini or fusilli pasta
- 2 grilled chicken breasts
- 4 cups chopped romaine lettuce
- 1/2 cup freshly grated Parmesan cheese
- 1 cup Caesar dressing
- 1 cup cherry tomatoes, halved
- 1 cup croutons
- Black pepper and salt to taste
- 2 tablespoons lemon juice
Instructions
- Cook the Pasta: Bring a pot of salted water to a rolling boil. Add in your pasta and cook according to package instructions, usually about 8-10 minutes.
- Prepare the Chicken: Season chicken with salt, pepper, and garlic powder. Grill for 6-7 minutes on each side until fully cooked.
- Chop the Veggies: Wash and chop romaine, slice cherry tomatoes, and grate Parmesan cheese.
- Make the Dressing: Whisk mayonnaise, Greek yogurt, lemon juice, minced garlic, Worcestershire sauce, salt, and pepper together.
- Combine it All: In a large bowl, mix pasta, chicken, lettuce, tomatoes, and Parmesan. Drizzle with dressing and toss gently.
- Serve: Divide into bowls, top with croutons and extra cheese, and serve with a lemon wedge.
