  • ¼ cup granulated sugar (adjust to taste)

  • 1 tbsp cornstarch (or all-purpose flour)

  • 1 tsp lemon juice

  • ½ tsp vanilla extract

For the Pastry:

  • 1 package (2 sheets) puff pastry, thawed

  • 1 egg, beaten (for egg wash)

Optional Glaze:

  • ½ cup powdered sugar

  • 12 tbsp milk or lemon juice


Notes

  • Cool filling before assembly to prevent soggy pastry.

  • Don’t overfill; leave a clear border for sealing.

  • Keep puff pastry cold; handle minimally to maintain flakiness.

  • Freeze unbaked turnovers on a sheet pan; bake from frozen, adding 3–5 minutes.
