Banana Bread

  • 3 ripe bananas, mashed

  • ½ cup (115 g) unsalted butter, melted (or coconut oil)

  • ¾ cup (150 g) sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1½ cups (190 g) all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp cinnamon (optional)

  • ½ cup pastel sprinkles (jimmies style work best)

Optional Glaze

  • 1 cup powdered sugar

  • 12 tbsp milk

  • ¼ tsp vanilla

  • Extra sprinkles


Instructions

1️⃣ Prep
Heat oven to 175°C / 350°F. Grease or line a 9×5-inch loaf pan.

2️⃣ Mix Wet Ingredients
In a large bowl, whisk mashed bananas, melted butter, sugar, eggs, and vanilla until smooth.

3️⃣ Mix Dry Ingredients
In another bowl, whisk flour, baking soda, salt, and cinnamon.

4️⃣ Combine
Add dry ingredients to wet. Gently fold just until combined — do not overmix.

5️⃣ Add Sprinkles
Fold in sprinkles with just a few strokes.

6️⃣ Bake
Pour batter into pan. Bake 50–60 minutes, until a toothpick in the center comes out with a few moist crumbs.

7️⃣ Cool
Cool in pan 10 minutes, then move to a rack to cool completely.

8️⃣ Glaze (Optional)
Mix glaze ingredients, drizzle over cooled loaf, and add extra sprinkles.

Notes

  • Use very ripe bananas for sweetness and moisture.

  • Stir the batter lightly — overmixing makes dense bread.

  • If the top browns too fast, loosely cover with foil near the end.

  • Use jimmies sprinkles, not tiny balls, to reduce color bleeding.

  • Great as muffins too: bake 18–22 minutes.
