Need comfort food that’s fast, fresh, and full of Italian soul? This skillet of golden gnocchi, jammy tomatoes, melty mozzarella, and fresh basil hits all the right notes. Crispy on the outside, tender inside, it’s like Caprese salad cozied up with warm, cheesy carbs—ready in under 30 minutes and made to impress without the stress.


Ingredients

  • 1 lb shelf-stable or refrigerated gnocchi

  • 2 Tbsp olive oil

  • 1 pint cherry tomatoes, halved

  • 2 garlic cloves, minced

  • Salt & pepper, to taste

  • 1 cup fresh mozzarella pearls or diced fresh mozzarella

  • 1/4 cup fresh basil, torn

  • Optional: Balsamic glaze for drizzling


Instructions

  • Crisp the Gnocchi: Heat oil in a non-stick skillet over medium-high. Add gnocchi in a single layer. Cook 8–10 mins, tossing occasionally, until golden and crisp.

  • Add Tomatoes & Garlic: Push gnocchi to edges. Sauté garlic 15 secs in center, then stir in tomatoes. Cook 2–3 mins until tomatoes soften and blister slightly. Season generously.

  • Cheese Time: Remove from heat. Scatter mozzarella over top, fold gently once or twice. Let sit 1 min to melt.

  • Basil Bliss: Tear basil over the skillet. Drizzle with balsamic glaze, if using.

Notes

  • Add spinach or cooked chicken for a hearty boost.

  • Try pesto instead of balsamic for an herby variation.

  • Use vegan mozzarella for a dairy-free version.
