Creamy Sausage Tortellini Soup

One-pot comfort in just 30 minutes!

Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 (9 oz) package refrigerated cheese tortellini (or frozen)

  • 1 cup heavy cream (or half-and-half for lighter version)

  • 2 cups baby spinach or chopped kale

  • ½ tsp Italian seasoning

  • Salt & pepper, to taste

  • Optional: grated Parmesan for topping


Instructions

  • 1 lb Italian sausage (mild or spicy)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 (9 oz) package refrigerated cheese tortellini (or frozen)

  • 1 cup heavy cream (or half-and-half for lighter version)

  • 2 cups baby spinach or chopped kale

  • ½ tsp Italian seasoning

  • Salt & pepper, to taste

  • Optional: grated Parmesan for topping

Notes

  • Avoid overcooking tortellini—it will continue softening in the hot soup.

  • Make ahead: Prep soup base (through step 3) up to 2 days in advance; add cream & tortellini when ready.

  • Too thick? Thin with extra chicken broth or water.

  • Freezing fully assembled soup is not recommended; freeze base only.
