Description

A luscious, comforting pasta dish enveloped in creamy garlic sauce and tender chicken, perfect for any day of the week.


Ingredients

  • 2 large Boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb (450 g) Twisted pasta (fusilli)
  • 3 Tbsp Unsalted butter, divided
  • 45 cloves Fresh garlic, minced
  • 1 ½ cups Heavy cream
  • ½ cup Chicken broth
  • 1 cup Grated Parmesan cheese, freshly grated preferred
  • 1 tsp Italian seasoning, divided
  • ¼ tsp Red pepper flakes, optional
  • Fine salt & black pepper, to taste
  • 2 Tbsp Fresh parsley, chopped, for garnish

Instructions

  1. Start by cutting your chicken breast into bite-sized cubes (1-inch or so). Season them generously with salt, black pepper, and half of your Italian seasoning.
  2. Grab a large skillet and place it over medium heat. Add 2 tablespoons of unsalted butter.
  3. Once the butter is melted and bubbling, add the seasoned chicken pieces to the pan. Cook for about 6-7 minutes until golden brown.
  4. Add your minced garlic and sauté for about 1-2 minutes until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for a few minutes until it starts to thicken.
  6. Sprinkle in your grated Parmesan cheese and stir until it melts into the creamy sauce.
  7. Cook your fusilli in a large pot of boiling salted water according to package instructions, usually around 8-10 minutes for al dente.
  8. Drain the pasta (don’t rinse) and add it straight to your creamy chicken mixture. Toss everything together gently.
  9. Taste and adjust seasoning with more salt, black pepper, and the rest of the Italian seasoning.
  10. Scoop your creamy chicken pasta onto plates or in bowls. Sprinkle with freshly chopped parsley.

Notes

For a lighter option, substitute heavy cream with half-and-half or non-dairy milk. Enhance with garlic bread or a simple side salad.
