  • 2 tsp Cajun seasoning (store-bought or homemade)

  • 1 tsp garlic powder + 1 tsp onion powder

  • 2 tbsp olive oil

  • 250g light cream cheese, softened

  • 200ml low-fat milk (or unsweetened almond/oat/cashew)

  • 3 cups cooked basmati/jasmine rice

  • 2 cups roasted veggies (zucchini, peppers, onions)

  • Fresh parsley or green onions, for garnish


Instructions

  1. Sear chicken: Heat oil in skillet. Toss chicken with spices, cook 5–7 mins until golden.
