- 1 cup Cottage Cheese
- 1 cup Marinara Sauce
- 1 cup Bell Peppers
- 1 cup Mushrooms
- 1 cup Spinach or Kale
- 1 cup Shredded Mozzarella Cheese
- 1 tablespoon Olive Oil
- Salt & Pepper to taste
- 1/4 cup Sliced Olives
- 1/4 cup Diced Onions
- Fresh Basil to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare a sturdy oven-safe bowl or small casserole dish.
- Layer the cottage cheese as the base of your bowl.
- Add the marinara sauce over the cottage cheese.
- Chop and add the diced bell peppers and sliced mushrooms along with the spinach (or kale).
- Sprinkle with shredded mozzarella cheese on top.
- Season with salt and pepper to taste.
- Scatter sliced olives and diced onions atop the mix.
- Drizzle with olive oil.
- Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
Notes
For a nice brown top, consider broiling for the last couple of minutes while keeping a close watch.
