Description

Chicken Chukka is a classic South Indian dish that combines succulent chicken with a medley of spices for a comforting and flavorful experience.


Ingredients

  • 500 grams chicken (bone-in or skinless)
  • 2 large onions (sliced)
  • 2 tsp ginger garlic paste
  • 2 tsp red chili powder
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • Black pepper to taste
  • ¼ tsp garam masala powder
  • 2 tbsp coconut oil
  • Curry leaves
  • Coconut oil for frying onions
  • Salt to taste

Instructions

  1. Marinate the chicken by cleaning and chopping it into bite-sized pieces. Combine with turmeric powder, red chili powder, coriander powder, and salt. Let marinate for 30 minutes.
  2. Heat a heavy-bottomed pan and add coconut oil over medium flame.
  3. Sauté the sliced onions until golden brown; remove half for garnish.
  4. Add ginger garlic paste and cook for 2-3 minutes until the raw smell disappears.
  5. Incorporate the marinated chicken and cook for 5-7 minutes on high flame to seal in juices.
  6. Sprinkle in black pepper and garam masala, mixing well.
  7. Toss in curry leaves and stir.
  8. Cover and simmer on low heat for about 20 minutes, stirring occasionally.
  9. Adjust seasoning and add water if the mixture is too thick.
  10. Finish by adding crispy onions on top before serving.

Notes

Chicken Chukka improves in flavor when made a day ahead. Reheat before serving.
