Ingredients

- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup chopped vegetables (spinach, bell peppers, onions, etc.)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 12-cup muffin tin with cooking spray or a little olive oil.
- Mix the eggs in a large mixing bowl until blended nicely.
- Add cottage cheese to the whisked eggs and gently combine.
- Incorporate shredded cheese and chopped veggies, mixing until combined.
- Season with salt and pepper to taste.
- Fill the muffin tin with the egg mixture, about 3/4 full.
- Bake for 20-25 minutes, until puffed and lightly golden.
- Cool in the pan for about 5 minutes before serving.
Notes
These bites can be made ahead and stored in the fridge for up to 4 days. Reheat in the microwave for about 30 seconds.
