Cheesy Fiesta Potatoes

Ingredients

For the Potatoes:

  • 1 lb russet potatoes, diced into ½-inch cubes

  • 3 tbsp canola oil (or avocado oil)

  • 1 tbsp all-purpose flour

  • 1 tbsp cornstarch

  • 1 tbsp taco seasoning

  • ½ tsp salt

  • ¼ tsp black pepper

For the Cheese Sauce:

  • 15 oz nacho cheese sauce (or homemade cheese sauce)

  • 2 tbsp milk (if needed to thin)

For Serving:

  • ½ cup sour cream

  • Optional toppings: sliced green onions, pickled jalapeños, fresh cilantro


Instructions

1. Prep & Season the Potatoes

  • Preheat oven to 425°F (220°C).

  • In a large bowl, toss potato cubes with oil, flour, cornstarch, taco seasoning, salt, and pepper until fully coated.

2. Roast to Perfection

  • Spread potatoes in a single layer on a parchment-lined baking sheet.

  • Roast for 15 mins, flip, then roast 15-20 more mins until golden and crispy.

  • Optional: Broil 1-2 mins for extra crunch!

3. Warm the Cheese Sauce

  • Heat nacho cheese sauce in a small pot over low heat, stirring occasionally. Thin with milk if needed.

4. Assemble & Serve

  • Pile crispy potatoes on a platter.

  • Drizzle generously with warm cheese sauce.

  • Top with sour cream and optional garnishes.
