Ingredients

- 8 oz pasta (e.g., rotini or fusilli)
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/2 cup croutons
- 1/2 cup Caesar dressing
- Salt and pepper to taste
- Optional: cooked chicken or bacon for added protein
Instructions
- Boil the pasta by bringing a big pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente.
- Drain the cooked pasta in a colander and rinse it under cold water to stop the cooking process.
- Prep the veggies by chopping the romaine lettuce and halving the cherry tomatoes.
- Make the dressing if you’re opting for homemade by blending anchovies, garlic, Dijon mustard, lemon juice, egg yolk, olive oil, and Parmesan.
- Combine the cooled pasta, romaine, cherry tomatoes, Parmesan, and croutons in a large mixing bowl.
- Dress the salad by drizzling the Caesar dressing over the ingredients and tossing to coat.
- Season with freshly cracked black pepper and salt to taste.
- Add cooked chicken or bacon if desired.
- Serve the salad in bowls and sprinkle with extra Parmesan on top.
Notes
Can be made ahead of time; keep dressing separate until serving to maintain crispness.
