- 2 cups Pasta (Rotini or Fusilli)
- 2 cups Romaine Lettuce, chopped
- 1 cup Caesar Dressing
- ½ cup Parmesan Cheese, grated
- 1 cup Croutons
- 1 cup Cherry Tomatoes, halved
- 2 tablespoons Lemon Juice
- Black Pepper, to taste
- 2 tablespoons Olive Oil
Instructions
- Cook the Pasta: Bring a big pot of salted water to a rolling boil. Toss in your pasta and cook according to the package instructions until al dente (about 8-10 minutes).
- Prepare the Dressing: While your pasta is cooking, combine mayonnaise, lemon juice, minced garlic, and anchovy paste (if using) in a bowl. Whisk until smooth and creamy.
- Chop the Romaine: Chop your romaine lettuce into bite-sized pieces.
- Combine Ingredients: Once the pasta is done cooking, drain it and run it under cold water. In a large bowl, combine the cooled pasta, chopped romaine, halved cherry tomatoes, and grated parmesan.
- Dress the Salad: Pour your creamy Caesar dressing over the pasta and veggies and toss gently until coated.
- Finish with Croutons: Sprinkle the croutons on top just before serving to keep them crunchy.
- Season: Add freshly cracked black pepper and extra parmesan if desired.
Notes
Store dressing separately if making ahead of time for freshness. This salad tastes even better after chilling in the fridge.
