Description

A refreshing twist on the classic Caesar salad that combines pasta with crispy romaine, Parmesan cheese, and creamy Caesar dressing, perfect for any occasion.


Ingredients

  • 8 ounces of pasta (any short variety)
  • 1/2 cup of homemade Caesar dressing
  • 1/2 cup of grated Parmesan cheese
  • 1 cup of croutons
  • 2 cups of romaine lettuce, chopped
  • Salt and pepper to taste
  • Optional: cherry tomatoes, halved

Instructions

  1. Cook the Pasta by boiling a pot of salted water. Add pasta and cook until al dente (8-10 minutes). Save a cup of pasta water before draining.
  2. Prepare the Dressing by combining 1/2 cup mayonnaise, juice of one lemon, minced garlic, Dijon mustard, and Worcestershire sauce. Whisk and incorporate Parmesan.
  3. Chop the Romaine into bite-sized pieces.
  4. Combine the cooked pasta with the Caesar dressing while it’s warm to absorb flavors.
  5. Add the grated Parmesan cheese and croutons, folding gently.
  6. Toss in the chopped romaine and cherry tomatoes until combined.
  7. Let it Chill for about 30 minutes before serving.

Notes

For a vegan version, use a vegan Caesar dressing and nutritional yeast instead of cheese.
