Ingredients

  • 6 large eggs
  • 1 cup (225g) cottage cheese
  • 1/4 cup (60ml) milk
  • 1/4 cup (30g) shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8-inch square baking dish by spraying it lightly with cooking spray.
  3. Mix the 6 large eggs in a large mixing bowl until combined.
  4. Add the 1 cup of cottage cheese and 1/4 cup of milk to the beaten eggs and mix well.
  5. Season with 1/4 teaspoon of salt and black pepper, then fold in the 1/4 cup of shredded cheddar cheese.
  6. Chop the chives and mix them into the egg mixture.
  7. Pour the mixture into the greased baking dish.
  8. Bake for about 30-35 minutes or until the edges are golden brown.
  9. Let it cool for 5 minutes before cutting into squares.
  10. Serve warm and enjoy!
