- 1 cup unsweetened applesauce
- 1 cup whole wheat flour
- 1/2 cup sugar or a sugar substitute
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract

- 1/2 cup unsweetened almond milk (or any plant-based milk)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the wet ingredients: combine applesauce, almond milk, lemon juice, and vanilla extract in a large bowl and whisk until smooth.
- Combine the dry ingredients in a separate bowl: whisk together whole wheat flour, sugar (or substitute), baking soda, cinnamon, and salt.
- Combine the wet and dry mixtures: slowly fold the dry ingredients into the wet mixture using a spatula.
- Grease an 8-inch round or square baking pan.
- Pour the batter evenly into the prepared pan.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
- Slice and enjoy!
