Ingredients

  • 1 cup plain unsweetened Greek yogurt
  • ½ cup honey or maple syrup
  • ¼ cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 2 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix the all-purpose flour, baking powder, and salt together in a medium-sized bowl.
  3. Combine the Greek yogurt, honey (or maple syrup), lemon juice, and lemon zest in a large mixing bowl until smooth.
  4. Blend the dry ingredients into the wet mixture gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes, until a toothpick comes out clean.
  7. Cool in the pan for 10-15 minutes before transferring to a wire rack.
