A healthier twist on classic brownies using cottage cheese for added moisture and protein.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab an 8-inch square baking dish and grease it lightly with oil or line it with parchment paper.
  3. Blend the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until smooth and creamy.
  4. In a large mixing bowl, whisk together the cocoa powder, flour, sugar, and baking powder.
  5. Pour the creamy cottage cheese mixture into your dry ingredient bowl and gently fold together until fully combined.
  6. Add in chocolate chips if desired and fold gently into the batter.
  7. Pour the brownie batter into the prepared baking dish and smooth the top.
  8. Bake for about 30-35 minutes or until a toothpick comes out clean with a few crumbs.
  9. Allow the brownies to cool in the pan for about 10-15 minutes before transferring them to a wire rack to cool completely.

Notes

For a creative twist, try adding nuts, peanut butter, or fruit to the batter!
