Description

Ingredients

  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 cup blueberries (fresh or frozen)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or loaf pan.
  2. Whisk the eggs together in a large mixing bowl until frothy.
  3. Add the cottage cheese and vanilla extract, mixing until well combined.
  4. Mix in the almond flour, baking powder, and a pinch of salt until just combined.
  5. Fold in the blueberries gently without crushing them.
  6. Pour the batter into the prepared baking dish and bake for about 25-30 minutes or until golden and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
