- 3 large eggs
- 1/4 cup almond flour
- 1/4 cup blueberries (fresh or frozen)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or loaf pan.
- Whisk the eggs together in a large mixing bowl until frothy.
- Add the cottage cheese and vanilla extract, mixing until well combined.
- Mix in the almond flour, baking powder, and a pinch of salt until just combined.
- Fold in the blueberries gently without crushing them.
- Pour the batter into the prepared baking dish and bake for about 25-30 minutes or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
